I know

People are suffering all over the world. But I think that one thing that people really value is that there is always someone who will never leave or give up. Perhaps that is what life is made up of. Recognizing the irreplaceable people and having the courage to do something about it.

I really enjoyed the first 25 years of life with Ray, sometimes I think I still should pinch myself.

I love you Ray, you lift me up and keep me honest at the same time. This is a message to say to people who are cynical out there.

I love you.

Okay I have a recipe for you, it's simple and it always works, pay attention.

Macaroni and Cheese(s)

First boil 2 cups of macaroni elbow according to package directions with a pinch of salt. 10-12 minutes drain but do not rinse, rinsing will take away some of the ability of the macaroni to absorb the cheese. Set aside.

Preheat oven to 400 degrees

Prepare 8 by 8 inch pan preferably ceramic or glass, either will work nicely and keep the macaroni and cheese warm. Generously butter or spray with cooking spray, this is so you will not have a really crusty pan to clean up.

Melt 4 tablespoons of butter, add 2 tablespoons of corn starch and whisk until bubbly for one minute. Remove from heat, do not burn.

Microwave 2 cups of non-fat, 2%, or whole milk depending on how you feel about milk.

Add to butter/starch mix and cook over medium heat until bubbly for 2 mintues, stir.

Add as much shredded cheese as you like 1 to 1 1/2 cups slowly to the hot mixture, be careful becase this can curdle and ruin the casserole, add a little at a time and stir to avoid this.

Add macaroni to casserole dish and top with reserved shredded cheese (1/2 cup)

Pour warm cheese sauce over the top of macaroni and cheese.

Top with crushed and buttered saltine crackers.

This is a very nice casserole and will easily serve 2-4 people all by itself depending on how hungry the people are.

Our family loves garlic seasoning from Lawry's and so we often use this to salt the cheese sauce.

You have these opportunities because of the people that you know, the places that you have been. At least that is what you think.

But the real reason is because God wants you in a certain place and time. And he needs you to learn something from this thing called life and he wants so much for other people to learn something too. He wants you to know His love and He wants to know you love. The 2 loves are not the same, but they are both important. Are you listening?

This is an amazing tool...

I know that many people are yearning for the one thing that has recently been called "voice". I work at a university. I recently read about Yale and MIT posting links on the internet to class lectures. Open Access to what was once "economically classified" information. Elitely formatted so that only the chosen would benefit. Now, technology is retrofitting our concepts in research and education. We are not confined by buildings and our publications are blogs...how the world has changed.

I am both blessed and cursed with a never ending curiousity and insatiable "why" built in me. This has lead to a life where the status quo is always the one to challenge.

The possibilities of helping people through this open access are so incredible.

I look forward to the time, when we all use and share the benefits of this information wealth sharing.

I hope and pray that those in positions of leadership can see the possibilities.
